These spicy noodles will make a boring Wednesday a lot less dull.
2020 is the year of the home cooks and all aspiring recipe creators and that’s a great thing. People have finally stopped relying on restaurants and have picked up the apron. Even though I used to cook most of my meals at home earlier, this year has pushed me to upgrade my cooking skills, due to sheer necessity. Since I cannot just walk across to the next door Asian restaurant and order my favourite spicy noodles, I decided to recreate it as closely as possible as home. And I am proud to say that the result has been quite good.
These noodles are wholesome, soothing, spicy, filling and extremely satisfying. I usually make these during the middle of the weak especially when I am in a state of funk or just feeling blah. I put tons of chillies, make it super spicy and I love it! It just tastes so good!
But I try to make it as healthy as possible by using Japanese soba noodles ( they are healthier compared to the regular Hakka noodles) but equally delicious. I also replace regular vinegar with the apple cider alternative. Also, even though you can use as many vegetables as you wish, I tend to keep it simple and add my favourites.
Now, you ready to give it a shot?

Method
In a wok or a pan, heat the oil on medium flame.
Add the chopped chillies and saute for 30 second.
Then add the onion and capsicum and saute for 1 min until soft.
Add the salt and soya sauce. You can also add a 2 tbsp of apple cider vinegar to enhance the taste.
Toss everything together and cook for another minute or so.
Its ready!
Keep In Mind
This recipe is extremely versatile and you can play it up as you like it. Feel free to add tons of veggies like broccoli, mushrooms, corn or whatever you have in your fridge. You can also add scrambled eggs on top to make it even more filling. I tend to put some chopped coriander ( I love coriander and add it to everything!) and sesame seeds on top but you can replace that with spring onions or skip it altogether. Not a bad looking dish, right? Trust me, it tastes even better. When it comes to food, its important to listen to your body and give it what it needs.
